As much as I’m an animal advocate, I will admit I am not a vegan. However, that doesn’t stop me from eating veganized dishes. In fact, I do so regularly. It’s always intriguing to me that traditional recipes can be made with endless, unconventional substitutes— and turn out delicious to boot! Here’s one that I’m currently loving by healthy chef and inventor of the inspiralizer Ali Maffucci. I especially am fond of this recipe because I despise mayonnaise. I am forever on the hunt for coleslaw alternatives.
