When New Jersey native Amie Valpone was given 24 hours to live by doctors after being hospitalized for stomach condition c. difficile colitis, she weighed 98 pounds. But don’t worry, this story has a happy ending. Valpone beat those odds and has gone on to become a celebrity chef and speaker who, she says, managed to cure what ailed her by changing her diet.

Now Amie, who grew up in Sea Girt (she now splits her time between her hometown and New York), has written a cookbook, Eating Clean: The 21-Day Plan to Detox, Fight Inflammation, and Reset Your Body, walking reader through how to eliminate foods from their diets that may be harming their bodies. On her website, The Healthy Apple, you can find a wealth of resources and recipes organized by meal as well as those that are dairy free, gluten free, vegan and vegetarian. Among her desserts are lemon zinger bars and a raw chocolate coconut banana tart. Whether you’re trying to recover from an illness or simply want to eat healthier or just lighter with the warm weather, she’s got plenty of options for you.

Truth be told, I’m a former vegan who now loves a good burger and fries but one glance at Amie’s Instagram and I feel healthier just by observing all the colorful greens and other healthy options she’s cooked up.
