Noodles and elephants: Hoboken blogger’s magical trip to Thailand

Visiting Thailand is pretty high up on my travel bucket list. I’ll get there eventually— in the meantime, I’ll live vicariously through healthy chef Alissandra Maffucci. The inventor of “the inspiralizer” recently took a break from her busy schedule to celebrate her one year wedding anniversary in the stunning country. While her trip seemed nothing short of incredible, we can only hope she gained some recipe inspo over there. After all, she is the non-noodle master. Pad Thai sans pad anyone?

In serious tourist mode: sneakers, sports bra, a tee & jorts. ☺️ Today was a full, amazing day. We started with an incredible breakfast featuring spicy fried eggs and noodles and then head into the city for a proper Thai massage that ended with the most delicious cashew-rice cracker and hibiscus tea. Walked around the Wat Chedi Luang temple and came back to have lunch at the hotel, stuffing ourselves with sticky rice, spicy seafood stir fry, and Thai BBQ chicken. Regrouped and then headed to a temple up in the mountains: Wat Prathat Doi Suthep, where this picture was taken. What a gorgeously detailed temple and what breathtaking views of Chiang Mai. Such a humbling experience to see such culture and history. We're now on our way to the Sunday night markets, where I'm excited to try all the street foods. After our massage this afternoon at @fahlannaspa, we crossed a bridge over to a charming area of Chiang Mai with art galleries. We popped into @woo_chiangmai and were blown away. The food, the decor, everything. I'm going to probably post a few pictures in rapid secession because it was just that incredible. We had the rice salad pictured here (you must watch my Snap story – SO cool) and stir fried noodles with vegetables, which were ???????? Afterwards, we stopped by a gallery and bought two beautiful hand-painted ceramic elephants that we can't wait to bring home. We're having the perfect day.
